What does “gluten-free” mean and how does it affect you?

Today, on An Apple a day, Jen Davis, a registered dietitian, talks about Gluten-Free living. Gluten-Free means a product does not contain wheat, barley or rye. A person who benefits from a Gluten-Free diet is one that has an autoimmune disorder called Celiac disease. Some symptoms include gas, constipation, abdominal pain, and even joint pain. If you suspect you may have Celiac disease, you need to speak with your doctor. It is important when on a Gluten-Free diet to read labels and be aware of cross contamination. Many grocery stores carry Gluten-Free items such as crackers, breakfast bars, pretzels, granola, cookies, pancake mix, and pizza crust! And don’t just look in the section that the store has designated “Gluten-Free”. Be sure to check out smaller family owned stores like Nature’s Valley in Wellsboro, and The Barnstead Pantry in Troy .
